- The griddle was an iron plate and had two handles. Griddle cake was very nice. People sometimes try to get the same kind of cake by baking on a frying pan. Potato cake was a great favourite and was always used at Hallow Eve. It was made of cooked potatoes, those left over after the dinner, and flour. They were sliced and buttered and eaten while hot. Potato cakes are still made. A very nice cake was made of flour and yellow meal. This was called Johnny Cake. Bread was baked in a bastable. Burning turf was placed on the lid and the gentle heat baked the bread delightfully. When turf was scarce "borawn" or dry cow dung was used instead. There was always beautiful sour milk for baking and the people were very proud of their baking. It was no small praise to say of bread that a woman baked that it was as light as a feather. The juice of raw potatoes was used to make the cake rise.
