At the end of October the potatoes are dug and stored away in shallow pits in the field. The good ones are picked and put in pits for themselves and the "pohins" or small ones are put in smaller pits.
It was an old Irish custom to leave every stone in the field on the ridges of potatoes.
The most common potatoes that are set in Carnarce are Kerr pinks, Queens, Aran banners and Champions.
