    a strip of cloth was fixed round the sides of the lid.
    When little bits of butter appeared the churning was said to be broken and then in 15 mins or so it was done.
    The butter was taken out with a strainer, washed with cold spring water, salted and packed in a firkin for the market in Sligo where the Inspector marked it Superfine 1st or 2nd according to its sweetness.
    Then according to its mark it got a good price or a bad one.
    The women were very proud when they got the good mark.
