  1. The churn which we have at home is the real old Irish one. It is about 3ft. high, and the circumferance at the bottom is 3ft. 8ins. while at the top it measures half this amount. A round flat piece of timber about 20ins. thick, and diameter 9" x 9" beats the milk, the handle of which is 5ft. long. On the lid of the churn there is a cup through which the handle works, and this cup is commonly called "the jigger". Churning is done twice a week for the rounds of the year. After churning the butter is left on the milk for a couple of hours, and is then transferred to a keeler, where it is washed and salted by the woman of the house. It is the custom locally for people who come into the house where churning is going on to take the dash; another custom is, a man would not be allowed to leave the house with a lighted pipe, the reason for which I cannot relate. The most peculiar custom of all is to put a lighted coal under the churn if certain suspicious people
