The bread in this district was made from wheat crushed at the mill nearby and sieved.
It was wet with milk and baked beside the fire on a flat pan called a griddle it was then called a griddle cake.
There was special bread made on special occasions called yeast bread. This was made by dissolving a pinch of yeast in one quart of hot water, putting in the flour and leaving it to set for three hours. It was then kneaded and baked and was like the loaf of today.
Then there was a bread called oaten meal bread: add a little salt, thick milk and bread soda to crushed oats.
The bread was made every three days. Bread was baked before the fire standing against a support.
