   and once a week in the Winter time when the milk is scarce.
   My father and I do the churning. Sometimes strangers help at the churning because they know they will get a good drink of buttermilk when it is finished. It almost takes an hour to churn. The churning is done by hand. We move the staff, with the dash at the end of it, upwards and downwards.
   When the churning is done, the butter comes to the top of the milk. To gather the butter we rock the churn on a round block. Hot water is poured round the inside of the churn to rinse the butter off the churn. We lift the butter with a strainer and put it in a wooden dish. It is washed to take buttermilk out of it. It is salted and mixed. Then it is washed again to take any lumps of salt out of it. It is
