    first put in the cream then water and a sprinkle of holy water. When the cream first turns into small bits of butter it is called cracking. Then you would turn it very slowly to gather the butter.
    In winter if the butter was hard to make you would put in hot water to make the cream crack more quickly and in summer cold water to keep it cool.
