   Oatmeal porridge, boxty bread, potato bread and Indian meal porridge were the principal foods used long ago. To make boxty-bread potatoes were got and mashed thoroughly. They were rubbed on a home-made grate and grated into pulp. The pulp was put into a clean linen cloth and the water squeeze out. It was put into a basin and mixed with flour and salt. It was then put on the pan to bake. This is how potato cakes were made boiled potatoes were broken up very fine. They were mixed with flour and put on the pain swiming in butter.
