- (ar lean ón leathanach roimhe)-the potatoes. When the potatoes are set they are left until the young stalks appear. Then the farrows are dug with a plough or spade and shovelled up on the ridges. When the stalks are strong and big a liquid called blue . stone is sprayed upon them from the blight. The digging of the potatoes is usually done with spades and it is women who usually pick them. When the potatoes are picked they are stored in pits in the garden but after a while they are carried home and stored in lofts.
The names of the various kinds of potatoes are ker pinks, Arran Banners, Irish queens, Epicures, Brown Blacks, Up to dates, Leather boats, Shamrocks, Champions, White Rocks.
Kerr pinks and Irish Queens grow best in this district. Starch is often made from potatoes. The potatoes are grated into water and left just in the water for about four hours.
