- Emly is a dairying district. A lot of milch cows are kept in the district. The farmers depend on the cows for their living. They sell the milk to the creamery. They use the separated milk to feed the calves and pigs. The cows are left out in the field by night after the 1st May. They are left out until the 1st January. If the weather comes bad they are put in earlier. On May eve the cattle are sprinkled with holy water to protect them from pishogues. Holy water is also sprinkled in the fields. The cattle are milked while they are out, in a small field called a bawn. They are milked in the morning at half past five o'clock and in the evening at five o'clock. On the 1st January the cows are put in. They are tied with bails or chains or a rope around their horns. They are fed with hay, and turnips, and mangolds. They are let out for a few hours to get a drink of water. The cows have names. They are called after the person from whom they are bought or where they were bought. A buck goat is kept in the house with the cows to keep them from slinging their calves. That is to calve before their time. When people are driving cows they say How! How! When they are driving calves they say Hosuck!
