  1. Churning.
    Collected from my mother Mrs R. McLaughlin, Fahan, Barony of Inishowen, Co.Donegal.
    Our churn is three feet high and two feet across the mouth. Before we begin churning we collect the milk in crocks and leave it in a cool place in the summer and a warm place in winter. We collect for about three or four days. By that time the milk should be in a thick livery form. Then we empty it into the churn. We thin out with warm water in winter and cold water in summer. The dash is working up and down sharply for half an hour and by half an hour the butter should appear. The butter is washed down from the sides of the churn with cold water in summer and warm water in winter. Churn for the second half hour more gently and by that time butter should be all in nice pieces. Take the butter from the milk wash well with cold water and add salt to taste. Beat the water well from the butter and shape in prints on bricks.
