  1. In the end of July and the beginning of August when the new potatoes are ready for use Ceallaí is a favourite dish in farmers' houses. The new potatoes are thoroughly washed. The light skin is then peeled off and the potatoes are boiled. Some slices of onion are then mixed with the potatoes.
    The potatoes are then bruised with a " tuirghnín " and the Ceallaí is completed. It is then served out in platefuls to the members of the family and eaten up with spoons. Every person makes a well, or " tobar " , as it is locally known in his plate of Ceallaí. Then he fills the tobar with butter. The hot Ceallaí melts the butter and everytime he takes a spoonful of Ceallaí he dips into the tobar before he
