    from raw milk and soda.
    It was also baked in an oven. Cream scones can be made by substituting cream for milk and adding butter margarine. They can be baked in either a griddle or in an oven. Other kinds of bread made locally are potato-cakes, boxty, stampy, pancakes, oaten-meal bread, apple cakes and barm-bracks.
    Potato cake was made from boiled potatoes which were crushed and pastry was put around them. The pastry was made from flour, soda and cream and rolled thin. The cake was baked lightly in an oven, and when served with butter was delicious.
    Stampy was made from raw potatoes which were grated and put between two crusts of pastry made from flour, soda and cream. It was baked in an oven.
    Pancakes were usually made for supper and eaten hot with butter. They were made from eggs, flour, sugar and milk or cream. The eggs were broken into the dry ingredients and milk added. They were mixed lightly and poured on to a frying-pan or griddle and baked for a few minutes. They are also made without sugar.
