    Then when market day came - usually on Tuesday the people loaded their carts, horses and cars etc. and took the butter to the City of Cork. The people ranged their cars along in a row, and the buyers came to the side of each cart, then the cover was taken off the firkin and the buyer stuck an auger in the butter and smelt to it, to find out if it was fresh, if it was the suitable kind of butter, he bought it at a good price but if it smelt stale he did not buy it atall.
