- The potato crop never varies from two acres every year and my brother prepares the land. First he gives it a winter ploughing, he back-tosses it and then he cross ploughs it, and harrows it and then he ploughs it again and harrows and crushes it. Then he opens the drills with a double plough.
Then he puts out the farmyard manure and then it is spread and the potatoes are dropped and the drills are closed. The seed potatoes are picked and some of them are cut and there must be an eye on each of them. Then there is lime shaken on them and then they are dropped.
In the summer months the potatoes are hoed and in the Autumn they are ploughed out with a double plough. The men and children pick the potatoes and they gather them all together and put them into pits and then they sort them out.
