1. Churning

   We have a churn at home - like all other farmers. It is 19 inches high and it is thirteen inches wide ath the top and the same at the bottom. The sides are round. The churn is fifteen years old. The various parts are the lid, the barrel, the handle and the stand. The marks that are on it are "The Dairy Engineering Company of Ireland, Dublin."

   Butter is made once every week in the winter time, and twice every week in the Summer time. Sometimes I do the churning and sometimes my mother does it. Strangers who come in during the churning help at the work because they think they might take the butter off the churn if they didn't. It takes twenty minutes to do the work. It is done by hand. The churn is turned round by twisting the handle. There is a glass in the lid and when it is clear the butter is made. Boiling water is often added to make the
