churning is done by the hand.
When the strangers come in while the churning is going on they take a brash. They do this to put luck on the churning.
There is boiling water out on the milk to heat it to sixty five degrees for churning. The churning is finished when the dash comes up free from butter. When it is nearly finished the dash is moved backwards and forwards to gather the butter.
The butter is taken out with a strainer and put in a butter dish. Then it is washed with cold water until it is free from milk. Then fine salt is put on it and mixed through it. It is then made up in rolls and prints. The butter milk is used for making bread.
