She filled the grated potatoes into two meal bags, placed one on the top of the other on the flat stone over the porch outside the door. She then placed a few heavy flat stones on the bags and left them there until all the water had trickled away. She then mixed boiled potatoes with the grated ones added some salt, made it into dumplings and then it was ready for boiling. (She used no flour in the boxty)
   Every night she boiled a pot of "dumplings" until she had all cooked. She then placed then in a large oak "chest" or "bin" in a room at the back of the fire. No bread was used in the house whilst the boxty lasted. She generally made as much as lasted from 1st November till Candlemas.
