- Churning.Long ago the churn was made in nearly every house, but not now, because of the creameries. My mother has a small churn at home. It is a timber one. In winter she makes butter once a week, but in the summer she makes it twice or three times a week.There is a small handle in the side of the churn, and when my mother is making butter, she twists the handle for about a half an hour 'till the butter gathers into little knobs. Then she puts in hot water, and it sticks together. Then the spicet is removed, and the butter-milk let out. The butter is then taken out of the churn by a skimmer, and washed several times 'till the water comes clear. Then it is salted.One neighbour has a glass churn. It is like a glass crock, with a tiny handle on the side. The price of it was ten shillings and sixpence.Long ago it was little cooling tubs that were used for the washing of the butter.
