    They are covered with rushes then the rushes are covered with soil.
    The names of the potatoes around our district are as follows. Arran Banners, Arran Chiefs, Arran Victors, Arran Pilots, British Queens, Sherry Champions, Golden Wonders and Kerr's Pinks. Kerr's Pinks grow best in this district. Kerr's Pinks are the favourite potatoes.
    Potatoes were used for starch at one time. The potatoe was washed, peeled and grated. Then it was (stepped) steeped in a dish with very little water in it. When it was a few hours it was put in a cloth and the juice was squeezed out of it. This juice was the starch.
