    The churning is done by hand and the dash is always moved upwards. The people know when the churning is done when the dash comes up clean. Cold and hot water is poured in during the churning to make it easy churned. The butter is lifted into the pail and salted and then made into bars or rolls. The buttermilk is used for bread and calves and pigs.
    There was an old saying that if any one helped at the churning the would not be let out without tasting the buttermilk afraid thy would bring the butter with them. There was an old saying that if anyone came in and lit their pipe and went out smoking while the churning was going on they would bring the butter with them.
