- Long ago the people had no separators and they used to set the milk in large pans. When they would have the cows milked they would strain the milk into the pans, and leave them set for about twenty four hours. Then they would skim off the cream with a skimmer into a large tub. This cream used be gathered for five or six days and every evening the milk that would remain under the cream would be let off this milk used to be called whay.
After about five days the churn would be made. The woman of the house would make the churn. After the first few rounds of the churn she would take off the cork and let out the wind.
It was an old custom if anybody came into the house while the churn would be making they would have to make a dres of the churn the old people used to say that you would bring the luck of the butter.
