- Bread
In olden times three different kinds of bread were made in the district: "Potato-cake, "Oaten-cake" and Boxty.
Potato-cake.
It was made from boiled potatoes which were peeled and broken up finely. A little flour and salt was mixed with them. The mixture was kneaded into a dough. When made it was put into a losset and cut out in four parleys, about an inch thick. These were baked on a griddle.
Oaten-Cake
was made of a little flour, salt and soda. When it was well mixed it was flattened out and cut in four parleys. These were put on a little stand made of timber which was placed before a bright fire. When one side was baked the other side was turned up to the fire and baked.
Boxty
was made from potatoes which were washed and peeled. They were next grated up on what was called a "scraper" which was made of tin with holes bored through.
The potatoes were then put up into a large cloth and squeezed so as to take out the starch(leanann ar an chéad leathanach eile)- Bailitheoir
