Some years ago there were no creameries in the country and the farmers made their butter in their own dairies. When the cows were milked the people used to put the milk into earthenware pans of similar material to our flower pots. Those pans were glazed inside to keep the milk from soaking into them and from getting sour. The milk was left two or three days in the pans.(leanann ar an chéad leathanach eile)
