  1. The people long ago used to live on Oaten bread, and bread made from potatoes and Boxty bread which is made from raw potatoes.
    Receipt for potato Cake
    Peel some boiled potatoes and mash well to get them free from lumps.
    Add a pinch of salt.
    And enough flour to make a stiff dough, roll out and cut in squares or rounds and bake on a hot griddle or pan
    Receipt for Oatleake
    Put some Oat meal in a basin add a little flour and a pinch of salt.
    Mix well
    Then rub in a piece of butter according to the richness required
    Moisten the mixture with a little warm water roll out very thin.
    Cut in squares or rounds and bake in a moderate oven until a golden brown.
