  1. Starch used to be made locally long ago. First they used to peel the potatoes. Then they used to grate them with a grater. Then they used to put them into a cloth and squeeze the juice out of them. Then they used put the juice into a vessel, and the starch used to settle at the bottom of the vessel.
    A man named Jimmie Punch lived in Ballydehob about forty or fifty years ago. He used to make horse-shoe nails and other kinds of nails. All the nails used by the shoemakers in Ballydehob were made by him. Nails he made were used in the building of houses, and some of these may yet be seen.
