- (ar lean ón leathanach roimhe)the little lumps of butter form on the lid and dash. She then changes the brash and gives what is called the "gathering brash" This consists of one long slow drive of the dash to the bottom of the churn and then two short quick ones that only just touch the surface of the milk. At the same time the dash gets a little twist round in the hands. After a little while at this kind of churning the dash will come clean out of the churn eg. there will be no bits of butter on it, and the milk in the churn will make a watery noise. The churning is then finished. The lid is then taken off and both lid dash and sides of churn are washed down with cold water. The lid is then put back on the dash on the churn, but not closed tightly, and the woman gets the pounder or a sod of turf and puts it under one side of the churn so as to tilt it up. Then she catches the dash, and by means of the dash, she rocks the churn over and over. She continues this for a few minutes. This is called "joggling" and brings the butter together into big lumps. She then proceeds to "take off" the butter.
