  1. Leithe bán - Made from oaten meal and new milk. The milk was first boiled when oaten meal was added. It was allowed to boil for a few hours when butter and sugar were added. It was then eaten hot.
    Sgailtín = It was made in the same manner as leite bán but buttermilk was used instead of new milk. Sugar and butter added and eaten hot.
    Flummery = Some of the seeds left after grinding oats were procured and put steeping. After two days the liquid was strained off and boiled for a hour. Then put out on plates and covered with sugar and eaten hot.
