- In olden times most bread used in this district was made of wheaten meal and rough flour which was made in Irish mills from home grown wheat. Potato_bread was made from boiled potatoes mashed, salt flour and milk. The mixture was rolled out flat and cut in squares and baked on a griddle.
Boxty bread was made from raw potato grated and mixed with cooked potato and flour. It was very heavy and hard to digest. it was usually baked on a pan or gridle sometimes it was eaten fresh made. If it got cold it was fried to make it lighter.
