    There are many sorts of potatoes sown in this district, such as, Kerr Pinks, Epicures and Irish Queens. The Kerr Pinks and the Epicures grow the best in this district.
    Starch is made in this way. First of all three or four nice potatoes are got and peeled and washed very cleanly. Then they are grated into spring water which it must be strained out into another bowl and left to set. The water is removed and more put to it, and that also must be let set. It is generally left there for an hour or so. Then it is fit for use. The fragments generally are put into a paper and after a day the starch looks like flour.
    A boxty cake is made in the following manner. First of all the raw potatoes are peeled and grated. Then they are put into a bag and the water is wrung out of them. They are put into a basin and the bag is crumbled out. Salt and soda are added and milk is also put on it. Then all is stirred together and put into and oven to bake
    A potatoe cake is made in the following manner. Boiled potatoes are got and peeled. Then they are put into a basin and broken up together. Next flour is added and the potatoes and flour are mixed together. Lastly it is cut in to four quarters and butter is put into a hot oven and the quarters are put into it.
