    farmer digs the potatoes and when they are dry he puts them in a heap. Then he covers them with a light coating of rushes. Then he puts another coat of clay about two inches deep over the rushes in order not to let the frost or the bad weather of Winter affect the potatoes. There are various kinds of potatoes such as Kers Pink Great Soots and Champions in this district.
