- (ar lean ón leathanach roimhe)At one time bread was made with water, not milk, and it was left outside in the air for sometime before baking. The object of this was when the fresh air was blowing past some yeast plants which are in the air got into the dough and caused it to rise when baked. Of course, the people did not know at that time what was happening or why they left out the dough. The bread was made from whole-meal or oat-meal. There was also boxty bread, which was made with raw potatoes. The potatoes were scraped and pressed to get the water out, then they were mixed with flour and fried in a little grease on a pan.
