The people know when the butter is made when the milk breaks and the little white lumps come to the top. Water is poured in during the churning to help to make the butter. The butter is taken out with a butter spade and put into a basin of cold spring water and washed three or four times. The buttermilk is used for making bread and for drinks for the calves.
