  1. In ancient Ireland the common food of the people was very different from what it is nowadays. The principal kinds of bread made long ago were Oat-meal Bannocks, Barm Bread, Scones, Grated Bread. When making Oatmeal Bannocks two flat circular stones were got, with a slight hollow in one of them. This was called a quern. Oats was then placed between the stones until it was ground into flour. The ingredients used were flour and salt but no soda. It was baked on a grid-iron and was of a very hard nature. Grated bread was made of potatoes and it was baked dry. Scones were made of flour, sugar, and water. They were made very thin and were baked on a frying-pan.
