- BreadIn olden times oat bread wheaten bread and boxty were the chief kinds of bread used. Querns were used in olden time to grind oats into meal and wheat into flour. Flour and wheat were used to make wheaten bread and oatmeal was used to make an oat cake. Grated potatoes were used to make boxty. Water was used for kneading oat bread. Newmilk was used for kneading flour bread. Usually on a Monday enough enough bread was baked for the whole week. The shape of a cross was cut on the bread to bring a blessing on all who ate the bread. The oven was usually used for making wheaten bread and the pan was used for baking flour bread and a pot was used for boiling boxty. The oat cake was baked in front of the fire on a griddle. The griddle was made of iron and was left standing in front of the fire. When anyone was going to America or Australia they brought oat bredd (sic) with them to(continues on next page)
