  1. In olden times the people in this district, Borrisokane, used to make their bread from barley and oaten meal, and it was mixed with bran to make it soft. It was also made out of rye. It was wet with water and Indian Meal. The different kinds of bread were potato cakes and boxty bread, In making buck bread the ingredients that were used were grated potatoes and milk, sometimes if they had no milk they would make it from potato barm.
    The vessel that the bread was made in was called a losaid, and it was baked in an oven. When they had the cake made they put a cross on top of it.
