- (continued from previous page)cakes into a pot of boiling water and boil for an hour or so, or until the cakes rise to the top. While they are boiling they must be stirred constantly with a pot-stick. These cakes can then be eaten hot with butter, or with sugar and milk. Or they may be let get cold and split and fried in the morning with a rasher or butter.
Sometimes boxty pancakes are made by thinning out the squeezed raw potatoes with milk, and adding a little salt and soda to it. Then beat it up well and fry on the pan in butter. - Potato cake is made by peeling and mashing well some hot boiled potatoes.(continues on next page)
