- Boxty is a cake made of raw potatoes. It was first made during the famine when the potatoes were too bad to be eaten in the usual way. Take some raw potatoes wash them very clean, and grate them into a clean basin. When they are grated get a good piece of strong calico and squeeze the grated potatoes in it. The water was used for starch in the old days. Put the grated potatoes on a bread-board, and the same amount of mashed boiled potatoes. Put salt and flour and mix well.
