- (ar lean ón leathanach roimhe)and kept them clean. For Christmas they used boxty loaf which was made this way :
The raw potatoes were first grated and made into pulp. This was then put into a cloth and rung out; then a few boiled potatoes were added and a grain of salt. These were all mixed up together and put on a pan or in an oven and baked. This cake was very heavy but very nice. They also have pancakes for Shrove Tuesday.
This is made by mixing flour and new milk and a couple of eggs and sugar. All those are mixed up together in a basin and it is made very thin. Then it is put on a pan. When cooked it is very nice.
All these kinds of bread are still made occasionally in the district.- Bailitheoir
