Ar an leathanach seo
- (ar lean ón leathanach roimhe)flour, then kneaded out flat. Then it was cut with a knife into four parts and baked on a griddle. Boxty bread was grated raw potatoes mixed with flour and a little milk added. It was baked on a pan, or griddle.
Some farmer's wives used to bake on a Monday as much bread as was wanted through the week. It used to be very hard in the end of the week. Nowadays it is baked every second day.
Flour was very rare in the olden days. It was milled about here in large quantities, but was exported to France and England. My county of Meath had large flour-mills. New-haggard mill near Trim was the second largest flour-mill in Éire about 1860.
