- 2. In olden times bread was made from both oats and wheat. The flour was made locally in cities and towns. The potato cake consisted of flour, grated potatoes, butter and salt and some people put sugar in it and it was fried in fat. Very few people made boxty bread accept in the north of Ireland and they are very good at it there. It consisted of grated potatoes, flour, treacle, brown sugar, lard, candy peal, eggs, and nut-meg and it was only made once a year and that was Hallowe'en. It was very troublesome to make and a small boxty cake took four hours to make it. Soda bread was baked at least every second day and yeast bread was made once a week. Old people used put a cross on the cake so as it would not be a failure. Out in the country they used make the bread in bastables. The griddle bread was made in front of the fire.
