    Much used in May and June when potatoes are scarce.
    Oat Bread or Oaten Bread
    some oatmeal is placed in a basin with a little salt. Moisten with warm water until sticky. Roll out on a bake-board. Baked in front of an open fire on a gridiron. This was shaped like this:

    - ledge
    - Prop or leg.
    This cake was placed on the gridiron and rested on the ledge. The prop was drawn out and supported the gridiron.
    Baked until hard.
    This oatcake was very popular here but was hard to chew. The people's teeth were better than now.
