- In the north of Ireland when my mother was only a young girl the people of Co. Monaghan used to always keep 3 bags of oats in some dry corner. This oats was brought to a miller & ground into oat meal. Some of this was poured into a pail & steeped with water for a few days. A white substance came on the top & this was strained into a pot & boiled. When boiled it was very much like corn-flour [?] was eaten by the people for supper.
