  1. Churning
    In olden times when there were no creameries the people made their own butter. When the cream was separated from the rest of the milk the butter-milk was given to the calves. It is said that if a person had a bad cold the best thing he could do is to warm a cup full of butter-milk, and then add some sugar to the boiling milk he would be relieved of his cold. The cows were milked three times a day, in the morning, at miday, and in the evening. When a cow is being milked for the first time a coin is put in the bottom of the milking vessel so as to bring good luck to the cow and in order that she would have a plentiful supply of milk for the year. Sometimes an old horse-shoe is hung in the cow-house so as to bring good luck to the stock for the year, Nowadays the butter is separated in the creameries with much less trouble than in olden times owing to the wonderful machinery now in use.
