- When new potatoes are dug for the first time the people say "Go mbeidimíd beo ar an t-am seo arís" This is how they are cooked, first they are washed again and boiled in a pot. When they are boiled they are pounded with some onions and hot milk. They are eaten then with some butter and hot milk. This is called Calaidh or Calcannon. There is another way to cook potatoes that is to wash them and peal them and boil them with cabbage in an oven. This is called a stew.
