    Potatoes are cut into slits leaving two eyes in each slit. The eye is another name for the bud and from the bud the stalk grows. The neighbours help each other with the setting and digging of the potatoes. My uncle weeds and sprays them three times in summer. He digs them in Autumn and he gets a boy to pick them. The boy picks the big ones first and then the small ones. They are used for feeding pigs and hens. The big ones are stored in pits. The pit is about one foot deep and the potatoes are put into it. They are covered with clay, rushes, straw and scraws.
    The potatoes that grow best, locally are King Edwards, Kerry-pinks, Aran Banners, Dates, Garden pillars, Flounders etc. Potatoes can be used instead of starch.
