- (ar lean ón leathanach roimhe)When the cream is ripe it is turned into the churn and churned for half an hour, then there is boiling water added to it to bring the milk to the heat, sufficient to bring the butter to that it can be gathered with ease.
There are what they call strainers used, to lift all the butter off clean.
The butter is put into a wooden dish and all the butter-milk is washed out of it with cold water, then it is salted and made into what we call prints or rolls.
- Not far from my house is a place I love to pay a visit to this is called the forge.The smith in our district is called Paddy Boylan and his forge is situated beside Knappa Bridge. It has a thatched(leanann ar an chéad leathanach eile)
