Potato Cake. Potatoes were boiled and then peeled of their skin and bruised free from lumps and then a little flour was added to make it stick. It is then baked to a thin cake less than a half inch deep the size of a pan or griddle, which is used for cooking it on a turf fire. It is better cut through to allow the steam to escape.
