    in the country districts, and who went round from door to door selling herrings which they carried in a cliabh which they attached to their backs by means of two arm ropes.
    Often the only kitchen with potatoes' was butter and milk. This milk might be buttermilk, skim milk, thick milk or new milk according to circumstances. With poor people who often had only one cow or even those who had two there was a time of scarcity of milk generally in the Spring. Some of these kept goats whose milk they used. Others who had sheep made use of their milk, while those who had neither often made use of a drink made by steeping in water the shelling of the oats brought from the milk. The liquid which was sour was also used in times of scarcity of milk for eating with porridge. When it was boiled a sourish, yellowish gruel called "flummery" was made from it, and this was considered a great treat.
