    Butter is made about twice a week in the Summer time and about once a week in Winter. My mother usually does the churning. If a stranger happens to come in while the churning is in progress it is said that he should not go out without giving a hand at the work. A hand is given at the work for good luck.
    The churning takes about one hour. The churning is done by hand. The churn-dash is always moved upwards and downwards. The people know that the butter is made when it comes up on the churn-dash. Hot water is often poured in at the beginning of the churning to heat the milk. The butter is lifted out of the churn by a butter-strainer. Then it is salted and made into little rolls by means of a butter-spade. There are no local sayings or proverbs connected with churning.
